The Left and Right default menu is easy to setup. Just simply set the menu's style to vertical (this is Legacy - Vertical in Joomla 1.5, also remove the menu style suffix under Advanced in Joomla 1.5), make sure that Expand Menu is set to yes, and if you wish apply one of the many module styles.
