I have a blog already installed.
Do I still need the Site Shaper? or How would I install all features if I don't use the shaper. Or, what's the best way to go on this.

Site Shapers are for new installs only.  Even if you only install the theme, all features will be available, you will just have to set everything up on your own.  Using a Site Shaper will give you a site that's identical to the demo, but it will also mean starting from scratch & losing all your existing content.  You are probably better off just doing the standard install of the theme if you have content you would like to preserve.

by not using the shaper I just got an unformatted site.
Where can i get the list of the defaults the shapers was supposed to take care of? the list of ALL Shape 5 University Options. I don't have time for trial and error. some real video instructions would have been helpful.

The theme admin (Under Appearance) will allow you to set up virtually all the special features of the theme.

What do you mean by "elements"?  If you are referring to widgets, all that can be done through the "Widgets" admin area (under "Appearance" in the admin menu).
