I understand that I can set up what image to use via the Header Background Image URL.

Is there anyway for me to override the image being displayed base on what category of article it is displaying?  For example, display image1 if the article being displayed belongs to category 1, but display image2 if the article being displayed belongs to category2

Hello,

Unfortunately without custom coding there isn't a way to do this. The only other way to do it would be to copy the template and assign it to a menu item. Then in this copy of the template change the background URL. Then for that specific menu item this copy will be used which has a different background URL. You could do this for multiple pages too if you wanted.

I tried duplicate the template with a different image URL and assigned to specific menu items.  It worked.

I presume when you said "You could do this for multiple pages too if you wanted', you meant all the pages linked to by the specific menu items.

Yes correct. You could make a copy for each new page you wanted to change the background on.
