I went in and replaced the sub-menu text for the main menu on the template manager and two things happened.

First thing is the words disapeared.

Second is at the top it went from "writable" to ( file /templates/pantheon/params.ini is unwritable!  )

http://meetjustin.org/

I had a backup of the params.ini file and it corrected the unwritable for about two clicks as I was trying to get the sub-menu text to work.

Any suggestions?

Hello,

The writable/unwritable issue would be an issue with your server's permissions. However, the statement can be a little buggy in joomla. I have seen it many times say unwritable but was still able to write to it. As long as your parameters in the template configuration are saving there isn't an issue.

What are the exact sub texts that you are using for the menu?

Your question caused me to think for a moment.

Justin's Home Page - Does not work

Visit Justin Hines - Works

You cannot put an apostrophe in the text. Can That Be Fixed?

Hello,

That is exactly what I was going to look for Smiley

You can't use 's because that is a javascript text qualifier. When they are present it causes the javascript to end prematurely.
