I would like to change the brownish gradient and have it go all the way around the pages, rather than partially.

There doesn't appear to be a way to do this within the Template Manager.

Can anyone help?

You can use a larger image or change the no-repeat to repeat at Template.CSS - Line 3
body {
    background: url("../images/s5_background.jpg") no-repeat scroll center top / 100% auto #fbfaf7;
    color: #666666;
    font-size: 1em;
    line-height: 160%;
