when in mobile mode I can't access subnavigation items (see attached). What can i do to make the open in mobile mode?

Have you tried installing the Vertex Upgrade Patch?  Updates to the framework are made frequently, and the patch is updated every time something is changed; it's very possible that the issue you are having has been solved in a recent change to the patch.

You may also be having issues because all the images and videos on your site seem to have a z-index that is making them stay in front of the menu, preventing the menu items from being clicked on.
